RECIPE ALERT!!! A couple days ago I was feeling adventurous so I went to a Thai market and bought something that looked like a cross between Bok Choy and spinach, some little unknown mushrooms, and some scallion pancakes. I stir fried garlic, green onions, mushrooms, and added greens last. Then I stirred in a teaspoon of fish sauce. My secret ingredient was locally-made Laotian beef jerky sliced in slivers! I chopped some good local cucumbers and put them in a bowl with vinegar and sugar. I served all on brown rice with the chopped cucumbers on top, and I squeezed lime and soy sauce to taste.

I can't tell you enough how DELICIOUS this dish was! Matt and I ate every bite! Give it a try, your tastebuds will thank you ☀️ #PamTillis #recipe #foodie

*If you can't find Laotian beef jerky but you can use marinated beef strips cooked or teriyaki beef jerky~
